This recipe isn’t  full of sugar, you dont need a machine and you and your kids will love it! If you are in Melbourne or somewhere else sunny this weekend enjoy these without the guilt… if you aren’t (as I know about half of you are in the northern hemisphere) either rug up and put a good movie on and enjoy anyway or…. save this recipe page for in 6 months time! I hope you enjoy…

You can mix and match by adding fruits to this… but start off as is and take it from there!

VANILLA COCONUT ICE CREAM

WHAT YOU NEED:

2 can coconut milk (or cream)

a vanilla pod or some vanilla essence or cacao nibs work well too (or choc chips – YUM!)

WHAT TO DO:

Freeze the coconut milk or cream over night or for most of the day (you can pop in freezer in the morning for a late arvo snack) – you want to do this in a thin layer so you can pop into ice cube trays or even on a thin layer of parchment on a baking tray – dont do it in a huge chunk or it will be impossible to blend (I have tried!)

When you are ready take it out of the freezer and blend til smooth in a food processor (you may need to scrape edges a few times to get it smooth)

Scrape in the vanilla seeds or other yummies you are putting in and blend a bit more

Serve. This is really yum with frozen berries, mango, banana blended in too.
