To continue the fish theme – today I bring you fish tacos. My kids LOVE tacos and so do I. I make a variety of tacos – beef, tofu, chicken and fish. These are great with soft tortillas and a range of toppings – whatever you like but I usually have some red cabbage, corn, cherry tomatoes, corriander and lettuce. Some sour cream, avocado and sweet chilli usually hits the spot too.

Here’s how to make the fish – you experiment with the rest according to taste! Its another great use of the food processor!

WHAT YOU NEED:

1 cup corriander leaves

2-3 tsp paprika

1 tsp cumin

1 small red chilli (omit if your kids are spiceophobes)

1 tsp salt

Zest and juice of 1 lime

1/3 cup of olive oil

About 4 fillets firm white fish – barramundi or snapper is yum – cut into strips

WHAT TO DO

Blend everything except the fish in the food processor to a paste

Put fish in a bowl and mix the paste through to coat – marinade for about 15 mins (this is when I chop the vegies to accompany and put tortillas in oven to warm)

Heat a non stick pan on high heat – cook fish in batches for about 3 mins until just cooked.

Make up as you like and ENJOY!

This meal takes about 30 mins tops! Great for when you have ppl over for a casual family dinner too. x
