It will be a cold weekend here and it is a lovely time to make some sweet treats in the kitchen. We have also had a busy and rough week so my little monsters deserve something sweet to thank them for being such great kids! Here is a fantastic recipe for a sweet treat minus the nasties… suitable for gluten free diets too! Enjoy!

 

LEMON YOGHURT CAKES

WHAT YOU NEED
2 eggs (my boss just gave me a dozen eggs from his farm so mine will be uber free range, organic and full of a dark golden yolk!)

3 cups ground almonds (almond meal)

a big pinch bi carb soda

Juice and zest from one big lemon (you can also use grapefruit, orange, or a couple of limes)

about 1/2 cup honey

1tsp vanilla

50g coconut oil (or butter, olive oil but i prefer coconut oil if i have it)

1/4 cup plain yoghurt (I usually use greek)

 

WHAT TO DO:

Combine dry ingredients

Combine wet ingredients and then mix in

Put in patty cases and bake for about 30 mins at 160C
