Most kids love chicken nuggets, but I just cant give my kids the processed version! These homemade baked ones go down well and if there are any left they are good in lunchboxes the next day (or in a chicken salad for lunch at work). I sometimes make extra just so I have them for lunches later in the week.
WHAT YOU NEED
Cornflakes – about 3-4 cups
2 tablespoons flour
2 egg whites beaten
skinless chicken breast cut into 3cm chunks (about 500g total)
Olive oil spray
WHAT TO DO
Process cornflakes in food processor until fine – like breadcrumbs
Place egg whites, flour and cornflake crumbs in seperate bowls
Dip chicken pices into flour, then egg and then cornflake crumbs
Place on a baking tray and spray lightly with oil
Bake in 180C oven for 10 mins, then turn over and bake another 10 mins until golden
Serve with some sauce to sip it in and some veggies.
