This is a quick and easy dish – greek style. Kids will love it in wraps with some yoghurt/tahini and tomatoes. It also goes really well with a yummy greek salad and some cous cous.
WHAT YOU NEED
Lean lamb fillets – about 8
Juice of a small lemon, plus the zest
2 tbsp roughly chopped oregano
1 teaspoon honey
2 teaspooon olive oil
WHAT TO DO
Combine the meat, lemon juice and rind, honey, oregano and oil in a bowl – season
Heat a lightly oiled grill pan over a high heat
Add the lamb and cook to your liking (I do about 3 minutes each side for medium)
Rest the meat for a few minutes and then slice and serve with salad and cous cous or in wraps.
