I haven’t made these in a while and I am a bit annoyed I don’t have all the ingredients to hand today as I would love to whip some up.  They’re delicious and feel indulgent, but have a lot less nasties than what you’ll find in the bars you can buy at the shops.  YOu can switch some mixed seeds for the nuts if you need to go nut free.  I started these from a recipe from Gwyneth Paltrow’s cookbook and now do them by memory (so not sure how close to the original they are)

WHAT YOU NEED

1 1/2 cups raw nuts – almonds or cashews are best (I usually use cashews)

1 1/2 – 2 cups medjool dates roughly chopped

1/2 cup nut butter (almond butter is good) – use coconut oil if going nut free but a lot yummier with the nut butter

1/2 cup maple syrup

1/2 cup coconut flour

1/2 cup shredded coconut

1 tsp almond extract

1 1/2 cups dark choc chips or cacao nibs

1 1/2 tablespoons coconut oil

 

WHAT TO DO

Grind nuts to a fine meal in your food processor

Then add everything else except the chocolate and the coconut oil

Pulse until it is a sticky ball of dough

Line a pan with baking paper and press the dough into it to make a square about an inch deep

Pop in the fridge overnight – or for at least 6 hours

Combine the oil and chocolate in a bowl over simmering water and stir until just melted

Pour over the cold bar and pop back into fridge until it sets – about an hour

Lift out of the tin and cut into rectangles and serve

Can store in an airtight container
